mid-week meal share: one pot swedish meatball pasta

So this week I took an easy recipe and simplified it even more! Who could have guessed that I might try to take the easy way out when it comes to dinner? Instead of making meatballs from scratch I obviously bought frozen swedish meatballs.

While I was gathering up my ingredients to make dinner, Brendon and Kennedy left to go to his grandma's to mow their lawn (aw, what a good grandson). This left only me and Piper in the house and she had been steadily grazing on stuff for the past hour. My mind was already set on this recipe, so I just divided it to be single serving.

Easy to concoct: one pot, no problems.
Cost effective: ~$15. Even if you go the more treacherous route and make your own meatballs, the price will probably be comparable.


Pen + paper these items:



1 package frozen swedish meatballs
2 tablespoons canola oil (yes, I actually bought it instead of using vegetable oil)
2 cups beef broth
2 cups milk
½ tbsp salt
½ tbsp pepper
1 tbsp worcestershire sauce
4 cups egg noodles
1 cup shredded parmesan
½ cup chopped parsley


1. If you're like me and are gifted with a lazy bone, you'll want to warm up some meatballs in the microwave!



2. In a skillet, warm up your canola oil and then add in your meatballs. Cook for roughly one minute on each side.



3. Once your meatballs are properly heated add in your milk, broth, salt, pepper and worcestershire sauce. Mix together!



4. Once your sauce is boiling (which for me was almost instantly), add in your egg noodles and stir.



5. Cook for 7 or 8 minutes, stirring constantly, or until the sauce has absorbed almost fully. Mine took exactly 8 minutes, but I should have taken it off the heat a little sooner than I did.



6. Add in your parmesan cheese and parsley and stir until cheese is fully melted. Basically whisk it around twice and it's good to go!



7. Enjoy!



This recipe was a complete success! It was a shame my family missed out on it and I really don't know what I was thinking making only a single serving. I was clearly blinded by hanger. We will definitely be making more of this one!
