Busy week between work, home, and school and I didn't realize that I missed mid-week meal share! I know all you glamorous fans were upset and outraged; please forgive me. Oh, no one was waiting with bated breath for my recipe? That's fine too.
Wooo, another breakfast recipe! We did NOT make these for breakfast but I can assure you they were just as delicious for lunch. Omelette 'Muffins'! Yes, I think it's weird that 'omelette' is spelled wrong on the recipe but don't take it as a bad omen!
Yet another recipe I found on Facebook shared via a video clip. What can I say? If they can show an entire recipe in 30 seconds how hard can it be to pull off?! So far each one has lived up to my assumptions (minus the apple roses but that was definitely due to user unpreparedness).
Cost effective: ~$10 (for one dozen and most will probably have all ingredients on hand)
Easy to concoct: absolutely
Nutritious: yes
Here's what you'll need to bake up these little egg creations:
**the ingredients below will yield 4-6 muffins depending on what size eggs/pan you have
4 FARM FRESH eggs - kidding, regular eggs will work
½ tsp baking powder
½ tsp vegetable oil
¼ cup milk
& whatever omelette fixin's you love!
we used:
shredded hot habanero monterey jack
shredded colby jack
feta
spinach
ham
1. Preheat oven to 375°F.
2. Whip together eggs, baking powder, vegetable oil, and milk in a large measuring cup if you have one. I thought I was pretty genius to have thought that one up. One less dish, and no fumbling trying to pour a mixing bowl into something that you can easily use to pour. Amiright?
3. Prepare muffin tray by spraying with non-stick spray or greasing with butter.
4. Add omelette ingredients the the muffin tray, layer with cheese.
5. Pour egg mix on top of ingredients.
6. Put in the oven for 20 minutes (or until done).
7. Enjoy!
(I'm trying to get better at documenting each step of the recipe making process, of course this one was pretty straight forward and lacked confusion but hey! I gotta start somewhere!)
Kennedy was sort of confused and was insistent that the egg was 'on the inside', and Piper who normally loves eggs was not interested in eating these. I uploaded a video to my Instagram with the caption: 'The day no fucks were given.' She was throwing them off the tray of her highchair with all her might; I was dumbfounded.

Overall these were a success and turned out pretty good. The main thing I would have changed was to add more 'filling'. Our spinach and feta combo was sort of lackluster in the flavor department, but it wasn't something a little sriracha couldn't fix! Sriracha can fix almost anything (at least in my book)!
Whip it real good.
